Daniel Alvarez is the pastry chef of Union Square Cafe. Daniel got his start in the restaurant industry at 13 years old, working at his uncle’s Mexican restaurant in Westchester, New York. He originally envisioned his career as a savory chef but quickly fell in love with pastry while working at MacMenamin’s Grill. Daniel followed his passion to New York City, working as an intern at Jean Georges, eventually working his way up to pastry cook in 2012. He later assumed the role of chef de partie at the famed Dominique Ansel Bakery.
In 2014, Daniel joined Union Square Hospitality Group as a pastry sous chef at Gramercy Tavern, working closely with Pastry Chef Miro Uskokovic with whom he had met at Jean Georges earlier in his career. In 2016, Daniel became the pastry chef of Union Square Cafe and Daily Provisions where he oversaw the pastry and bread program at both restaurants and in 2018 was named an Eater Young Gun.
