2023 Chefs

The 0°0’ project started out of the need to keep us from going crazy as we keep looking for spaces.  The thought behind it was to offer a more complete experience from the traditional notion of a pop up, yet still relaxed and fun.

JJ was born in Arlington, Virginia and raised in the greater Washington DC area. In 2003, he graduated with a B.S. in finance from Villanova University. In 2007, he accepted a job at wd~50, and through the years worked every station, being heavily involved in research and development. After leaving wd~50, he spent time as a stagaire at Nihonryori Ryugin in Tokyo. Upon his return to New York, he was hired as a consultant for Torrisi to help with the development of their “2.0” tasting menu. JJ was then brought onto the team at McCrady’s by Chef Sean Brock for the purpose of  streamlining, expanding, and developing new techniques for their vinegar and fermentation programs combined with menu development. Upon completion of his time in Charleston, JJ returned to wd~50 as a sous chef.  He left wd~50 in September 2013 to return to  the DC area.
