Executive Chef Bryan Thomas is a Pittsburgh native, and a die hard Pittsburgh sports fan. He moved to Florida at 14 years old where he began his culinary career at The Clock, starting as a dishwasher before being promoted to line cook. After graduating from high school, Bryan moved to Virginia where he excelled at the Culinary School of Washington. Upon completing his program, Bryan became the Executive Chef at The International Town and Country Club in Virgina. He moved on to hold Executive Chef positions at The Lobster Claw in Ocean City for 3 years, and L&N Seafood in Virginia for 5 years. He became Director of Food Operations at Legal Seafoods, a position he held for 7 years before joining The Capital Grille family. Bryan has been an Executive Chef Partner for the Capital Grille for 14 years- starting in Providence for a year and a half before moving to the Washington D.C. location.
Bryan has been married to his lovely wife Francoise for 10 years, and they have 3 children- 6 year old twins Timmy and Margaux and a four year old son Henri. Bryan has travelled throughout the wine regions of France, and enjoys pairing his culinary creations with Old World French Wines. He is excited to share his passion for food and fine wine with you at the Heart’s Delight Dinner, and hopes this will be the first experience of many that you share together.
