Juancarlo caught the “restaurant bug” and his culinary debut was in a small “Fresh-Mex” concept in his college town of Worcester, Massachusetts. After attending law school for two years (while working in restaurants the entire time) he decided to continue his passion for the restaurant business. Juancarlo has managed or worked as a chef in numerous concepts in New York, Miami, San Juan, Puerto Rico and DC. After 20 years in the business he opened his first restaurant in May 2017 in downtown Silver Spring and named it after his eldest daughter Carolina. Lina’s Diner and Bar is a small neighborhood restaurant that serves New American fare rooted in classic French technique.
